    Introducing the latest addition to our Signatures series: Cordillera De Fuego, Costa Rica.

    This isn't the first time we've featured a coffee from Cordillera De Fuego, and just like before, it’s an absolute standout. Packed with bold festive flavours, this coffee offers a warm sweetness with notes of cinnamon and gingerbread. But it’s far from one-dimensional—layered dark chocolate notes create a creamy body, while a juicy cranberry acidity cuts through the richness, achieving a perfect balance.

    What makes this coffee truly special is its unique anaerobic natural processing. Known for amplifying fruity, vibrant flavours, this method adds depth and complexity to an already remarkable cup.

    Cordillera De Fuego SA was founded in 2015 when two coffee producing families with more than 40 years industry experience between them came together to create something new. Focussing on both thermal shock and anaerobic fermentations, cherries are grown on the Finca Berlin de San Ramón de Alajuela, in the West Valley of Costa Rica and owned by Mr. Evelio Fernández, one of Cordillera Del Fuego’s associates.

    The beneficio has become very aware of reducing its carbon footprint, so automated combustion furnaces have been implemented that greatly reduce firewood consumption. They also have a smoke emission processor to greatly reduce any pollutants going to the atmosphere. This is furthered by a whopping 4,000 m2 of patios for sun drying to reduce the need for mechanical drying by a large percentage, at least at the level of pre-drying.

    Waste water and ‘honey’ water are processed through reed beds and the use of micro-organisms.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.
