    The Profile

    The Profile

Here we have another fantastic coffee from Jairo Arcila. Scoring an impressive 87 points when cupped, this coffee will delight everyone from specialty connoisseurs to regular coffee drinkers.

This coffee is the Tabi varietal which translates to "good" in the language of the Guambiana indigenous tribe, and in our experience good in an understatement for this coffee.

You tend to find sweetness, richness and fruity acidity with Tabis, but always an amazing balance, body and flavour.

This particular coffee features a mild green apple acidity complemented by a rich, fudgey body and sweetness. Soft pear notes emerge through this sweet base, adding an extra layer of flavour and complexity without being overpowering.

    The Producers

    The Producers

Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. Married to Luz Helena Salazar, they have two sons, Carlos and Felipe Arcila, who co-founded Cofinet. Jairo began his career as the Mill Manager at Colombia’s second-largest exporter, dedicating over 40 years to the role before retiring in 2019.

In 1987, Jairo purchased his first coffee farm, Finca La Esmeralda, where he planted his first Caturra lot. Balancing full-time work and farming, he successfully grew his business, acquiring five more farms: Villarazo, Mazatlan, Santa Monica, Maracay, and Buenos Aires. During harvest, Jairo creates numerous local jobs, significantly benefiting the community.

With guidance from his sons, Jairo has hugely improved his coffee production techniques, including picking, sorting, and processing. He now grows exotic coffee varieties such as Pink Bourbon, Java, Papayo, and Geisha, resulting in exceptional flavour profiles.

    • Wholesale

We are always looking to work with likeminded businesses to serve our coffee.

If you're interested in serving this locally roasted Edinburgh coffee as your main offering, a guest appearance or as bags of retail, get in touch with us on roastery@machina-coffee.co.uk or call (0131) 656 9565.

    • Roasting Schedule

Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
