Description
Excelso is our new decaf espresso, but does not veer far from our hugely popular Popayan that so many of our customers have grown to love over the last 18 months.
It is still a washed Colombian from the exact same region and has also been decaffeinated with the Sugar Cane Process. Few can spot it as the odd one out on the cupping table.Tasting notes:

About the region / farms / producer:
Excelso is located in Popayan in the South West of Colombia, and is the capital of the wider Cauca department. It sits between the Western and the Central Mountain Range. This coffee is grown across various farms across the Popayan region of Colombia, before being transported to Caldas in Paisa to be decaffeinated. Decaffeinating the coffee in Colombia means that more of the profits stay in the country of origin, while also reducing the extra costs and food miles that incur when coffee is shipped to decaffeination plants in countries such as Mexico, Canada or Germany.

The process of EA Deaf:
Our Colombian E.A. (ethyl acetate) decafs are cupped as regular green samples and specifically identified for decaffeination, which happens in-country in Colombia before the coffee goes to export. This allows us to maintain both the integrity of the quality of the coffees we choose to decaf, but also to extend our intentional and responsible sourcing to our decaf offerings as well as our “regular.”
This process works by soaking green coffee in a bath of water and a solvent called ethyl acetate, which is naturally derived from fermented sugar, among other natural sources. The solvent bonds to the salts of chlorogenic acid within the coffee, which allows for the extraction of caffeine. The coffee is removed from its bath and steamed at low pressure to ensure no traces of E.A. are left, and the finished product is almost entirely free of any but the most trivial (0.1–0.3%) caffeine content. -------
Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point of 10-36 days). We recommend letting this coffee rest for at least 12 days before using.

Roasting Schedule
Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.
If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
