    This vibrant coffee hails from the renowned Guerrero region, known for producing some of Mexico's most intriguing coffees, with over 80% being processed naturally. Thanks to the investment of green suppliers like Ensambles and the diligent efforts of local farmers, Mexico is emerging as a producer of exceptional specialty grade coffee.

    In this particular lot, we’ve discovered a harmonious blend that is smooth and easy-drinking, yet full of delightful surprises. Delicate lighter notes rest on a sweet and rich candied pecan body, complemented by a bright yet balanced mandarin acidity.

    The experience becomes even more intriguing with a tangy wine gum sweetness that is both refreshing and mouthwatering. Best enjoyed black, this coffee is also delicious when served over ice with a wedge of orange.

    Introducing the latest addition to the Signatures series: Indii.
    Since 2017, Ensambles has been uncovering exceptional coffees from the remote region of Montaña Alta in Guerrero, the heartland of the Me’phaa indigenous community. This area, nestled near Oaxaca, is a haven for permaculture and sustainable practices, making it a treasure trove for coffee production. Here, almost all the coffee is processed naturally, enhancing Guerrero's esteemed reputation for producing truly unique brews.

    Ensambles has been pivotal in this region, empowering farmers to enter the specialty coffee market. Through comprehensive training in farm management, nutrition, soil health, pest control, and wet milling, they’re transforming the local coffee landscape. Moreover, they’ve established regional laboratories for physical and sensory analysis, bridging the gap between coffee producers and the specialty coffee world.

    Indii, meaning jaguar in the Me'phaa language, symbolizes a sacred animal revered for its association with fertility, rain, strength, authority, the triumphant warrior, and the spiritual bond between humans and nature.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.
