    The Profile

    The Profile

This Nicaraguan coffee lives up to its name, offering a sweet and fruity experience that draws you in from the first sip.

You’re immediately met with a rich, jammy blueberry flavour, more like baked blueberries than fresh ones, bringing a balanced acidity and satisfying depth.

The sweetness continues with smooth vanilla notes, adding a touch of complexity without overwhelming the cup. Just as the flavours seem to get a bit too playful, a rich raisin undertone steps in, grounding the coffee with a velvety texture.

This balance of body, sweetness and fruity notes creates a wonderfully rounded and enjoyable coffee.

    The Producer

In 2003, Hacienda Santa Luz was one of two abandoned farms purchased with a vision: to revive coffee production in a sustainable and environmentally conscious way. Over the years, the farm has not only replanted coffee trees, incorporating diverse and innovative varieties like Pink Bourbon, SL28, and Centroamericano, but also established a professional, self-sufficient operation that handles everything from cultivation to export.

Covering 105 hectares of coffee-friendly land, Hacienda Santa Luz proudly holds Rainforest Alliance certification, ensuring that expansion never comes at the expense of the environment. To support this commitment, they built an ecological processing plant and preserved 30 hectares of the farm as untouched forest.

Nestled in the mountains of Matagalpa, the farm benefits from a unique microclimate. CEO Ricardo Herrera, with expertise from Colombia and Costa Rica, and General Manager Marco Tulio Gonzalez, with an MBA in industrial engineering, lead a dedicated team of 50 permanent workers and 400 seasonal pickers.

In 2015, the farm introduced the H3 varietal, a cross between Caturra and an Ethiopian landrace. While it has some vulnerability to rust, H3 remains popular for its outstanding cup quality. Cherries are hand-picked at peak ripeness and dried slowly in two stages, creating the farm’s signature fruity flavours.

    • Wholesale

We are always looking to work with likeminded businesses to serve our coffee.

If you're interested in serving this locally roasted Edinburgh coffee as your main offering, a guest appearance or as bags of retail, get in touch with us on roastery@machina-coffee.co.uk or call (0131) 656 9565.

    • Roasting Schedule

Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
