    Introducing Happy Capybara, our new Brazilian decaf from Volcafe, designed to deliver an exceptional coffee experience without the caffeine. This regional blend showcases a classic Brazilian profile, renowned for its rich and robust flavours.

    Expect an inviting aroma and a flavour profile featuring notes of milk chocolate, and sweet brown sugar which add a delightful caramel-like depth, balancing out the richness. Complementing these flavours is a creamy cashew body, adding a nutty, buttery undertone that enhances the overall complexity of the cup.

    Whether enjoyed black or with a splash of milk, this decaf coffee promises a fulfilling and rich taste that mirrors its caffeinated counterparts.

    Our Happy Capybara decaf is a regional blend from Minas Gerais, curated by Volcafe Brazil. First, farmers send samples to their lab at Patrocinio, where quality analysts select and blend the coffee.

    The coffee is then sent to Varginha for sorting and defect screening before being exported to Bremen for decaffeination.

    In Bremen, the coffee undergoes the Water-Ethyl-Acetate (E.A.) process, using ethyl acetate from sugarcane to remove caffeine. The green coffee is soaked in water, steamed to open the pores, and then washed in the ethyl acetate solution to extract caffeine.

    The beans undergo multiple cycles of this process, followed by steaming to remove the EA, drying, cooling, and polishing. Finally, a quality control check ensures the coffee is ready for roasting.

      Our optimum recipe

      Happy Capybara is our new sugarcane processed decaf coffee and it's tasting amazing. It's insanely sweet and works great served either black or white.  Our current recipe for this decaf is:

      17g (Dose)
      36g (Yield)
      32 (Seconds)

      As an espresso it is fairly forgiving and flexible in recipe, so if you are a little too short or long, you will still get a great tasting shot.  That said, the closer you can get to this recipe the better it will be.

      This is being prepared on a La Marzocco Linea PB set at 96c on the brew boiler.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.
