Introducing Everysys
Who are Eversys?
Eversys are a Swiss company that produce the worlds best super automatic espresso machines. These machines look to bridge the gap between we we consider traditional espresso machines, such as the La Marzocco Linea Classic or Linea PB plus the Victoria Arduino Black Eagle or Eagle One, through to what most refer to as commercial Bean to Cup machines, such as Cimbali or WMF.
Everysys machines are positioned to take away the most challenging parts of making great coffee, removing the need for advanced coffee making skills, but still being able to achieve amazing quality coffee, and allow those serving the coffee to achieve amazing presentation in latte art, whilst having the time to really connect with their customers.
How do they do this?
The core focus on Eversys machine technology is to remove the variables in espresso making that generate lots of variance, that being dosing (The meatsurement of coffee being ground and used per drink), tamping (The levelling of the coffee after dosing and before preparation) and extraction (The point at which water is pushed through the coffee).
The desired outcome is to have a machine that can do all these tasks in a much more accurate, repeatable way with zero errors. Add to this, the ability to steam milk to perfection for any drink type (Latte, Capuccino, Flat White), leaving you just the task of pouring the milk, putting all your focus on presetation and customer engagement.
Depending on the level of features and automation you opted for, it's a bit like having an amazing barista on shift all the time, without ever making a mistake.

What is the Legacy?
The Eversys Legacy is their entry machine and arguably most popular model for offices and small / medium sized locations. It can produce between 60-80 drinks per hour, producing 2 drinks at a time. It can offer a mix of up to 4 different hoppers / grinders for different bean types, plus 2 different powders for chocolate. It's compact, simple to use and comes with the exact same technilogy and support as their other machines.
As it's geared more for offices and less 'hospitality' environments, it comes without steam wands, making use as easy as possible.
The two different versions look (almost exactly) the same, but do have some very key differences.
Legacy L2c:
This first version is the most stripped back model they offer, and only offers black coffee, so no internal milk option. It can house up to 4 hoppers and grinders for coffee and up to 2 modules for powder (Chocolate). While this model can provide a mix of black coffees (Blends, Single Origins and Decaf) and hot chocolate, any milk is needed to be added manually afterwards.
Legacy L2m:
The second version steps the features up in every way. It works alongside an external fridge with 2 milk options (So dairy and oat for example). Just like the L2c, it can house up to 4 hoppers and grinders for coffee and up to 2 modules for powder (Chocolate). For the delivery of milk, there are two options.
Firstly, it can dose both coffee and milk from the group head (Known as 1-Step), behaving like a traditional bean to cup. The key difference being that the actual espresso quality is a cut above anything available righrt now.
Secondly, it can also offer the option to steam milk internally, which measures, then steams & textures milk to precision, based on the drink option you select on the screen, then dispenses it via a separate tap. They refer to this milk option as '1.5-step', meaning that there are 1.5 steps to the process, the first is steaming, the second being pouring manually (half of the traditional process of first steaming, then pouring).
The grinding & espresso part:
In plain terms, this means they are capable of producing espresso to the same level of quality to that of the best traditional machines in the industry. They do this by grinding coffee at a level of quality to that of Victoria Arduino or Mahlkonig, then deliver / extract espresso quality at a level that is nothing short of amazing. nHistorically, this is something that bean to cups have not beeen able to do, which results in below par coffee.
The milk part:
Depending on the model you choose you have various options for the delivery of milk.
1: No milk option included in the machine, so the machine only offers black coffee, then you add milk manually yourself.
2: Add the milk added directly from the grouphead - 1-Step (Like a Bean to Cup).
3: Dose / steam internally - 1.5 Step, to then pour yourself.
4: Pour your milk into a jug yourself, steam using the auto steam wand, then pour, klnown as 2.0 Step.
*Please note: that the Legacy only offers two of the above milk options. The L2c is for black coffee only without an option to add milk, while the L2m offers the option of both 1-Step and 1.5-Step milk.

Who is the Legacy best suited too?
They are designed for those wanting to achieve exceptional coffee quality, but are faced with either one or both of the following challenges:
- You operate in an environment that is not necessarily coffee focused, such as a bakery, restaurant, conference outlet or hotel etc, and don't necessarily employ high skilled baristas to just serve coffee.
- You are an office that want to make great quality coffee available to your staff and visitors, as you want coffee at a level of quality that is far better than a normal bean to cup, but also do not want to operate a traditional machine, avoiding the need for barista's etc.
