    The Coffee

    The Coffee

Honey processing when done correctly produces some fantastic results. One reason that we are drawn to these coffees is the fact that their natural sweetness and body are enhanced, bringing a fuller and brighter flavour profile to life. When you use a process such as this on a high quality Gesha, the results are exceptional.

This coffee offers a vibrant flavour profile that’s typical of a Geshas, but the process brings a bit more than you would normally expect. It’s bright, sweet, and floral, with juicy papaya notes bringing a refreshing fruity acidity. The honey process enhances its natural body and sweetness, highlighting delicate flavours of jasmine and smooth Manuka honey.

These elements come together beautifully, creating a well-balanced cup with a light, syrupy body and a smooth, lingering finish.

    The Producers

    The Producers

On the green hills of Nariño, Colombia, this Honey Gesha coffee undergoes a unique process to enhance its natural sweetness and complexity. After selective harvesting, the cherries are pulped, leaving some mucilage on the beans. They are then spread on drying beds for a 36-hour fermentation, allowing the sugars to infuse, enriching sweetness and flavour.

Nariño, known for its volcanic soils and high altitudes, provides an ideal environment for coffee cultivation with its diverse microclimates. Terra Coffee, operating in Nariño and Huila, supports local coffee producers by improving production, processing, and quality. They customise their techniques to accommodate different altitudes, varieties, and farm infrastructures. Specialising in washed, honey, natural, and innovative processing methods, Terra Coffee ensures product traceability and consistency.

Terra Coffee works to educate farmers in good agricultural practices, safety, sensory analysis, and fermentation, with a strong focus on gender equity and youth inclusion. These efforts align with the values that we and our coffee suppliers share, which is why we are proud to support Terra Coffee.

    • Roasting Schedule

Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.
