    The Profile

    The Profile

This coffee is truly interesting and offers impressive depth, especially for a washed Colombian. It has a thick, syrupy body that feels rich and smooth, with deep flavours of sweet cinnamon and warm spices that give it a cozy, comforting taste.

What makes it even more unique are the juicy notes of pomegranate that bring a bright, refreshing acidity, balancing out the richness perfectly.

This mix of sweet, spicy, and fruity flavours creates a delightful complexity. Overall, it's a well-rounded coffee with surprising layers of flavour that make it stand out.

    The Producers

    The Producers

Bourbon and Papayo beans, grown in the lush landscapes of Huila, undergo a carefully monitored fully washed process led by Terra Coffee and local producers. The beans are de-pulped and washed to remove all mucilage, then fermented in water for 12 hours. Afterward, they are dried on raised beds for 10-12 days, depending on the weather.

Huila is renowned for its rich flavours and coffee excellence, symbolising Colombia's dedication to quality and passion for coffee production. Terra Coffee, operating in Nariño and Huila, supports producers by enhancing production, processing, and quality. They tailor their techniques to different altitudes, varieties, and farm infrastructures, specialising in washed, honey, natural, and other innovative processes.

Terra Coffee ensures product traceability and consistency while educating producers in good farming practices, safety protocols, sensory analysis, and fermentation techniques. Their commitment to gender equity and youth inclusion strengthens the partnership and reflects shared values, making their work in Colombian coffee regions both impactful and valuable.

We are always looking to work with likeminded businesses to serve our coffee.

If you're interested in serving this locally roasted Edinburgh coffee as your main offering, a guest appearance or as bags of retail, get in touch with us on roastery@machina-coffee.co.uk or call (0131) 656 9565.

    • Roasting Schedule

Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
