    The Profile

    Tablon de Gomez is a coffee we have bought for two seasons now, with it standing out yet again as a firm favourite on the cupping table. It's a great example of Colombian regional lot, that boasts great balance and clarity.

    Typical of coffees from the Narino region, it's bright, complex and insanely sweet.

    This particular lot has a tablet like sweetness (A Scottish version of fudge - but even sweeter), with a smooth & creamy milk chocolate body and a beautiful layer of green apple 'malic' acidity, making it a very refreshing cup.

    This is only roasted for espresso, working exceptionally well across both black and milk based drinks.

    We brewed this on a La Marzocco Linea Classic, set to 96c - with a recipe of 17g IN / 38g OUT / 34 secs.

    The Producers

    Tablon de Gomez is a small municipality located in Nariño, Colombia. This lot comes from various smallholders in the Cafes Especiales de Nariño Cooperative (Specialty Coffees of Nariño Cooperative). In fact most coffees from this region are grown by smallholders, typically on land smaller than 1 hectare; only 37 producers in the whole region grow on more than 5 hectares.

    The region is known for its high altitudes and mountainous topography, which can make it challenging to grow coffee - but worth it for producing some of the tastiest and most complex lots in Colombia. Further to this the cold climate here leads to a slower ripening of the cherry resulting in sweeter flavours in your cup.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
