Sumatra | Fata x HT Edun - Natural Anaerobic - Filter

Known for their soft, round and heavy-bodied flavours, Sumatran coffees are commonly used as blend components - you'll find it in our Vox Pop espresso blend for that very reason. Sourcing a Sumatran as a single origin in its own right is something really special, especially one of this calibre.

It comes from Nordic Approach, coffee hunters renowned for sourcing some of the most interesting and delicious coffees in the world.

Profile:

Fata x HT Edun is a truly exceptional coffee. Incredibly rich and textured, layered with flavours of herbaceous cola, syrupy sweet wine gums, with a delicious undercurrent of earth-spicey cardamom. Despite its intense flavours, it manages to remain well-balanced and quite refined. A testament to the people involved in cultivating such a high quality coffee, and experimenting with interesting processes.

The Producers: Fatar and Horti Tani

 Fata x HT is a collaborative effort by farmers Fatar and Horti Tani (HT) within the Alko cooperative, made up of around 400 members and 320 hectares in total. It's relatively uncommon to trace coffees grown in Sumatra back to farm level, so it's a really interesting coffee for us to get a hold of. It's actually the first crop Nordic Approach were able to separate into distinct farmers at the processing station.

The Process: Natural Anaerobic Fermentation

In 2019 Nordic Approach began a project of experimental processes with a small local roaster in Java called David Irawan. David works with producers on the ground to showcase the diversity of flavour from coffees grown here, improving the quality along the way. This particular lot is the result of a 96 hour anaerobic fermentation, which means it has been fermented in a sealed tank without any oxygen. This process tends to produce interesting, complex and striking flavours.

The Origin

Sumatra is an island within Indonesia, where the majority of coffee production is grown by smallholder farmers. Fata x HT Edun is grown in Kerinci, in an area called Gunung Tujuh - a valley that sits between the Kerincin Mountain, volcanic crater Gunung Tujuh Lake, and the Bento swamp. It is incredibly lush and green.

Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point of 10-36 days). We recommend letting this coffee rest for at least 12 days before using.
