    The Profile

    Add some brightness to your morning brew with San Pedro. Debuting as our festive coffee in 2022, we decided to continue its run into 2023 - it was just that good.

    Its flavour is sweet and sticky like sticky toffee pudding, very lightly brandied, balanced by a bright orange acidity. Smooth and well-rounded, it's not overly challenging but offers great complexity to those looking for it. It's easy to brew and even easier to drink, and with a good lasting body we think it's best suited to higher extraction brew methods like a Clever Dripper or Aeropress.

    The Producers

    San Pedro is a washed coffee from Huila, the speciality coffee capital of Colombia. The coffee grows across 25 smallholder farms in the village of La Primavera in Salado Blanco, in the valley along the Río Magdalena surrounded by citrus fruits, flowers and sugarcane. Coffee accounts for nearly 90% of the region’s income, growing abundantly in its rich volcanic soil and tropical climate.

    Regional Vs Single Estate: It's sometimes a nice story to hear about a single farm’s efforts to create a beautiful crop of coffee, in a single varietal, with a focus on quality processing and dedication for excellence. However, it is much more common to buy what is referred to as a regional blend or lot (such as this one), where numerous smallholders benefit from a collective effort, sometimes supported by a coffee exporter, charity or NGO, producing similarly exceptional coffee with a near identical profile, processed in the exact same mill under the same conditions. It is this scenario that there is a greater socio-economic benefit being created, and those who often struggle to generate a fair and decent income through coffee farming can be the true beneficiaries.     • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
