    The Profile

    San Felipe is a really lovely anaerobic natural from El Salvador.

    With tropical notes of mango and pineapple, and a cheeky hint of cognac, it's the perfect coffee to add a little sunshine to those dreich winter days. Mouthwateringly juicy, it's super fruity and ferment forward with a gorgeous velvety body. It's rich and complex, but not overwhelming, reminding us of the luxury of a decadent after dinner chocolate - but with a fantastic clarity and balance meaning you could drink it every day.

    When brewing we really recommend using a hand pourover method. A delicate touch really enhances the complexity.

    The Producers

    The Producers

    San Felipe is one of many farms owned by the Salaverria family, located in Apaneca-Ilamatepec along the steep hills of the Santa Ana volcano. Its high altitudes and old Bourbon trees make it ideal coffee growing. Coffee has been in the family for six generations, and its management in current form is headed up by sons Andres and Jose Antonio Jr, who have gone to great lengths to understand not just the producer side of coffee, but the whole supply chain, with a renewed focus on high quality lots. They have a longstanding relationship with importers Nordic Approach.

    All coffee from the family, including this lot from farm San Felipe, is processed by the family-owned mill Las Cruces. Over the years the company has moved away from producing coffee for volume, now with a greater emphasis on quality. It definitely shows - this is an anaerobic natural that feels deliberate, done so carefully, considerately and with expertise, avoiding the pitfalls and overwhelm of anaerobic process for the sake of it.

    Social responsibility and environmental sustainability is very important to the Salaverria family. 60% of their estate is Rainforest Certified, and they use 100% organic compost - which in turn strengthens the coffee trees' resistance to rust. For their workers they provide housing, healthcare and as much permanent employment as possible (coffee work being seasonal), as well as higher than average salaries and safe, efficient working conditions. The family has also donated land for hospitals and football fields, believing in doing good for the wider community as well.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
