Map #7

Map #7

First things first, this coffee is not subtle: it tastes like strawberries. It’s mouthwateringly sweet, almost gelatinous in body, with a supportive gentle acidity. Viscous and syrupy with a boozy undercurrent, Jairo Arcila is a coffee that oozes decadence—to be enjoyed like a dense chocolate brownie or a glass of ruby port.

Coffee production has been in the Arcila family for three generations. Jairo heads up five farms, and is father of Carlos and Felipe Arcila who co-founded Cofinet, the green supplier we source this coffee from. Cofinet represent many speciality coffee growers in Colombia, with an emphasis on high quality and experimental coffees. This lot was fermented anaerobically with strawberries and wine yeast which lends this coffee its unique flavour.

Producer: Jairo Arcila, Finca Villarazo

Varietal: Castillo

Elevation: 1,450-1,500 MASL

The Map Series so far

The Map Series so far

January 2021 saw the arrival of a new premium coffee range: The Map Series.

Our ambition with this series is to source and offer the most unique premium coffees we can find based on a journey across the globe and present them in a new eye-catching packaging solution that is reflective of the coffee inside.

We have spent considerable time and energy searching for these coffees and each one has an incredible story to tell - often challenging perceived wisdom and current trends.

Buying in small limited quantities we have roasted them with careful consideration to maximise their flavour profile.

  • More Information

Introducing the seventh instalment of our Map Series, a selection of unique, premium coffees with a story to tell.

Want to buy 500g or more? You can, but anything over 500g does not come in the bespoke box I'm afraid!

Please note: This coffee really opens up after 7 days rest. Any earlier and it does not offer the same kind of complexity that it is capable of.

How you can brew this coffee:
V60, Chemex, Kalita, Syphon, Cafetiere, Aeropress and Drip Machine (Moccamaster, Wilfa Classic etc).

  • Wholesale

If you are interested in serving this coffee in your business, please get in touch on either roastery@machina-coffee.co.uk or call us on 0131 656 9565

  • Roasting Schedule

Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 7 days before using, in order to release excess gas which can impact the flavour of your cup.

If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
