    The Coffee

    Finca San José is a short run single estate microlot from El Salvador, purchased just for espresso, and it's a bit special. There's very little of it available, so it will be gone pretty fast.

    Selected from a large table of El Salvador and Costa Rican coffees, it stood out for its quality and complexity. Great sweetness, strong body with amazing clarity and acidity.

    Profile wise it's a mix of both accessible and strangely complex. It has a rich fig like body that is quite like molasses, alongside a brown sugar sweetness and a clear layer of bright citrus acidity with tinges of orange and pear.

    It's made up of two varietals - Bourbon and Pacamara, hence the size of the beans, which are fairly colossal. For those looking to know more, you can read about Pacas here: https://varieties.worldcoffeeresearch.org/varieties/pacamara

    Process wise it's a natural, but one that has been managed meticulously, maintaining the coffees original characteristics perfectly and enhancing the intensity of the body and sweetness in a great way. There is a touch of booziness, but it's faint and not aggressive in any way.

    The Producers

    The Finca San José was bought from the Ruffatti Family in 2015 and has been integrated into the Café Tuxpal family ever since. The farm holds 14 hectares of virgin forest and 56 hectares dedicated to cultivating high-quality coffee. Since it was acquired, Federico Pacas Lopez has worked to slowly renovate the farm to produce better coffee and higher yields.

    Café Tuxpal is made up of six farms, a wet mill, and a dry mill. It is involved in the entire coffee supply chain: farming, processing, exporting, roasting, and coffee shops. In addition to processing the cherries from its own farms, Café Tuxpal also buys cherries from neighbourhood farmers. Lots are, as much as possible, kept and processed separately to let the coffee express its intrinsic flavours.

    As Finca San José is directly connected to Santa Ana Volcano’s forest, it grants beautiful sights of diverse fauna like reindeer, toucans, eagles and sirocco parrots. It is also the farm with the most varietals. They cultivate Pacamara, Red Icatu, Pacas, Bourbon, Geisha, SL28, Batian, Sampacho, Catimor, Anacafe 14, Portillo, Villalobos and Red Tabi.

    Fun Fact: The finca has its own farm horse, called Sirocco. He arrived in the early 2000s, loves to roam freely among the coffee forest, and is a great companion when visiting the farm.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
