El Salvador - Finca Las Mercedes (Red Honey) - Espresso
One of the most anticipated coffees of the year. This is beautiful Red Honey Process of the Pacamara varietal from El Salvador called 'Finca Las Mercedes'. It's super clean, rich and full of autumnal flavours that we think really capture this time of year.
Finca Las Mercedes is a fantastic coffee. It's got that wonderful ability of being complex enough to satisfy the coffee aficionados of this world, but also accessible enough to be a real crowd pleaser.
It has a rich and punchy body with a prominent molasses & cola bottle flavour. This is supported by subtle notes of raisin and nutmeg, which act as an excellent balance to a sweet and very moreish coffee.
Recommended recipes for espresso:
This is a coffee you can really experiment with to get some really varied results. It's incredibly layered and complex. 17g-19g seems to be about perfect but time can be varied from around 32s-37s. Here's a couple of options for recipes:
17g IN- 39g OUT, 32 seconds. This is perfect if you want more fruit such as prunes, cola bottles and dates.
17g IN- 39g OUT, 37 seconds. Try this if you are looking for the full show. Keep reducing grind size until you start to notice dry / bitterness. You'll be greeted by walnuts, chocolate coated raisins, cola bottles and an outstanding mouthfeel. Rich and creamy, it coats your entire mouth and leaves you with a lasting and velvety finish.
Finca Las Mercedes is located on the shade rich lands in the North of El Salvador, on the north-eastern slope of the San Salvador Volcano. It's run by the Aguilar family who have been working their magic here for six generations. This dedication, joined by the detail focused processing of Tuxpal mill has contributed towards some exceptional coffee, with this lot being (in our eyes) the gem in this years offering.
It's a Red Honey process, so it's a variant of a natural on the higher end of the scale (more intense). 25% of it's mucilage is removed, and is then dried in the shade, which slows down the drying time, which in turn increases the amount of humidity the beans are exposed too. The result is rich and syrupy, but not as boozy as a full natural.
What equipment can I brew this on?
Whilst this is a quirky espresso, it's actually diverse enough to work on all sorts of espresso machines, ranging from single boiler (cycle) machines such as Gaggia Classic, Di-Longhi, Dualit etc, right through to pro-sumer kit such as Rocket, La Marzocco or Profi-tech.
Don't have an espresso machine? You can still create a great brew of this with methods such as Cafetiere, Aeropress or Clever Dripper. Maybe best steer clear of any stove tops / moka pots though.
