    The Profile

    The Profile

Caballero is our latest release from importers of stellar coffee Nordic Approach.

It's a single estate family affair from Honduras, produced and processed by Marysabel Caballero and Moises Herrera.

An utterly delicious coffee, Caballero's most striking quality is its sweetness—a vivid, sugary sweetness with a rich layer of vanilla cream. Exceptionally clean with brilliant clarity, it's soft, round and easy to drink with a gently supportive plum like acidity.

The epitome of a superb washed coffee.

    The Producers

    The Producers

This coffee is produced by wife and husband team Marysabel Caballero and Moises Herrera in the south east of Honduras. The two are second and third generation coffee farmers, and have been very successful in producing high quality coffees, helping boost Honduras's reputation for speciality coffee. They have invested significant time and resources into equipment and varietals to improve their coffee even more, vigorously documenting everything they do at farm.

The family own 17 farms in the area, forming a perimeter around their wet mill Xinacla. This particular lot comes from La Francisca farm. Maysabel and Moises are both firmly committed to environmental and sustainable farming practices, using organic fertilizer to improve soil quality, as well as growing oranges, avocados, flowers, bananas and other fruits to provide both food for the pickers, shade for the coffee trees and greater biodiversity to the local eco-system.

    • Wholesale

We are always looking to work with likeminded businesses to serve our coffee.

If you're interested in serving this locally roasted Edinburgh coffee as your main offering, a guest appearance or as bags of retail, get in touch with us on  roastery@machina-coffee.co.uk or call (0131) 656 9565.

    • Roasting Schedule

Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
