Colombia - Miravalle - Washed - Filter

Miravalle is an exceptional coffee. It's the name of the farm located in Pitalito in the the south of the Huila region. This lot is a small 25 bag production, which is the farms highest quality output from this years crops.
The coffee is made up of a mix of three varietals across Caturra, Columbia and Castillo. This is a very common mix of varietals for Colombian coffees to grow; a choice that is suited to the soil types in Huila and varietals that generate a high yield from this origin.
Profile (Filter roast):
Miravalle is a very versatile coffee that we intend to roast for both espresso and filter. This roast is the filter version, which we develop to around 19% in the late stages of first crack to highlight bright acidity and more acute flavours. We roast this coffee fairly light which draws out a lovely toffee sweetness and really clean red apple acidity that sits nicely in the background.
Miravalle is one of six small farms run by the same group of small producers (Miravalle, Rosal, Monte Bonito, Chillurco, La Herencia and Providencia). It is located in the south of the Huila region in and around the Colombian Massif; known colloquially as Nudo de Almaguer - the group of mountains within the Andes of south central Colombia. This is one of our favourite locations for Colombian coffee, due to it's exceptional growing conditions; a product of it's diverse microclimate and super fertile soils.
What's the best way to brew it?
This coffee as a filter is very forgiving and diverse, working well across both more precision brew methods such as Kalita or Chemex, but also standing up well as a Cafetiere or Aeropress.
