    The Profile

    Gascon is a somewhat unusual coffee, as we see very few experimental process coffees come out of Guatemala, normally always washed.

    This lot comes from the people at Coffee Bird, a small UK based importer of only Guatemalan coffee - due to the owners direct family connections to coffee farming communities in the country.

    The coffee itself is rich in body and sugar sweet, with the process used (Fermented), not becoming an overpowering factor in the coffee, instead excelerating it's profile and intensity to positive effect.

    The profile (despite it's process style) is actually a very accessible and moreish coffee - a dense chocolate and nutty body, supported by a super sweet cherry like layer that sits well with or without milk.

    Felipe Contreras was inspired to start in coffee by his grandfather Gildardo who started out in a small garden with a few coffee trees. He and picked and processed a small harvest each year, as a hobby. In 2012, he purchased a 40 hectare farm near the town of San Juan Gascon in the Antigua region of Guatemala, as a retirement project.

    The coffee cultivated in this region benefits from volcanic soil, which enhances its flavour profile, and exhibits excellent moisture retention properties.

    Motivated by a commitment to elevate quality, refine processing techniques, and enhance the performance of coffee varietals, Felipe’s coffees embody the qualities we hope for—delicate, expressive, complex, and characterised by remarkable clarity.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
