    Introducing Gaitania, brought to us by Cofinet, a distinguished name in Colombian coffee cultivation and distribution for 80 years. Now renowned for their expertise in alternative fermentation processes, Cofinet have brought us other exceptional Colombian coffees such as Luz Helena Salazar, which used banana processing.

    After being meticulously hand-picked to ensure only the ripest cherries were selected, they then underwent a 40-hour anaerobic fermentation, a process that enhances the coffee's unique characteristics. Following fermentation, the beans were sun-dried until the ideal moisture content was achieved.

    Gaitania exemplifies the art of anaerobic processing at its finest. From the first sip, you'll be captivated by its vibrant brightness and the luscious, boozy notes of tropical passionfruit. The fermentation process imparts an unexpected, almost earthy depth to the coffee, enriching its complexity. As you savor it, you'll discover layers of black cherry that unfold into intricate nuances of vanilla and almond. These flavors harmonize beautifully, culminating in a lingering, boozy finish reminiscent of spiced rum.

    Gaitania is a village located in the Planadas municipality in the department of Tolima. Planadas has a history that has contributed to the charm of its people and the department as a whole. It was once a region where political prisoners from the Liberal party were sheltered.

    Over time, both the Liberales and Conservadores established a good relationship, leading to the famous kindness of the people from Planadas, which is now well-known throughout the country.

    This coffee is produced by the indigenous community "Nasa Wesx" of Gaitania. The Nasa Wesx live in various indigenous territories in Cauca, Huila, and Tolima. The Nasa Wesx community is dedicated to environmental quality and conservation and has successfully certified all of their coffee as organic.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.
