    The Coffee

    Jairo Arcila Java comes from Cofinet, a premium speciality coffee sourcer based in Colombia. It comes in a very limited supply, housed in vac packs to retain the experimental notes in the coffee and process.

    It's a spectacular coffee and absolutely buckets of fun. It's tangy and uber citric, combining the tartness of orange juice with a cool, refreshing watermelon. Citrus notes prevail, tinged with the sharp, zingy sensation of fizzy sweets.

    Usually Anaerobic Fermentation results in very intense, and often boozy flavour notes that can over power the taste of the coffee leaving all process and NO coffee. With this particular lot the process has increased intensity to very high levels, but more in terms of candy sweetness and a super tangy acidity that makes the coffee really shine. A stunning example of experimental processing done well.

    The Farmer

    The Farmer

    Jairo Arcila is a third generation coffee producer from Quindio, Colombia. Jairo worked as Mill Manager at one of Colombia’s largest coffee exporters for forty years before retiring in 2019.

    During this time he bought his first farm, Finca La Esmeralda, growing Caturra lots while working full time at the mill. Since then, he has acquired five additional farms and continues to provide significant employment to the community during harvests.

    Jairo has two sons, Carlos and Felipe Arcila. Together they are speciality coffee experts and founders of Cofinet, a speciality coffee exporter in Colombia. The family are dedicated speciality producers, experimenting with innovative processing techniques, cultivating unique varietals and showing the utmost care and attention to their crop.

    • Roasting Schedule

      Your coffee will be roasted within 1-16 days of purchase, with a shelf life of 6 weeks (optimum serving point at 12-36 days old). We recommend letting this coffee rest for at least 12 days before using, in order to release excess gas which can impact the flavour of your cup.

      If you would like your coffee fresh, please leave a note with your order and we will do our best to accommodate.
